Creamy Roasted Mushroom Pasta

Many people who have followed my food for years know that Resha loves mushrooms. I know many people are weird about mushrooms, but this creamy roasted mushroom pasta will change their tune. Something magical occurs when you allow the mushrooms to soak up the heavenly flavors of balsamic vinegar, with a tiny splash of worcestershire that brings out their absolute best. They’re tender, meaty, crazy flavorful and addicting. As a forkful of creamy pasta swirls in your mouth with the bold flavor of the roasted mushrooms with the light crunch of the toasted breadcrumbs…my god!

Texture is so important to me, so I wanted to give you something that was not only delicious to eat, but exciting. Each bite will vary, but every bite will be effing delicious. Lemon zest is added to provide a much needed brightness and pleasant fragrance. Adaptable in every way, I think this will become a regular in your household. You are encouraged to add other things to it, or keep it meatless like it is. I love meat, but sometimes we all need a day off the meat…that’s what she said.

Creamy Roasted Mushroom Pasta Tips

  • ALWAYS put your food in a pre-heated oven! Don’t put the food in, then turn on the heat. Roasting just…doesn’t work like that.
  • I highly recommend roasting your mushrooms in the oven. It frees up space, takes almost no time, and every little morsel gets cooked to perfection. You could pan-roast, but that will take longer, and more babysitting.
  • Make sure you add enough oil prior to roasting so that they don’t become rubbery, but instead toothsome and tender — meaty!
  • Just about any kind of mushroom is my favorite, but I wanted to use a more widely available variety for this recipe — for you. Make this with maitakes, shiitakes, beech, chanterelles, trumpets, oyster, etc.
  • As for the sauce, it’s nothing more than a generous amount of heavy cream and some appreciated background dancers (like that amazingly sweet and earthy roasted garlic). Toasting the breadcrumbs is absolutely necessary here. If you’re a hater of texture, just leave them out — but you’d be missing out!

Roasted mushrooms are amazing, and this dish proves that. Such a comforting, creamy, and simple meal. Here’s to a delicious Meatless Monday!

Creamy Roasted Mushroom Pasta

Description

Balsamic roasted mushrooms and fresh garlic get flavorful and incredible before being tossed with a creamy, lemony bowtie pasta topped with toasted breadcrumbs. A divine Meatless Monday (or any day) awaits!


Ingredients

  • 20 ounces crimini and white button mushrooms, thinly sliced (SEE NOTE)
  • 8 large cloves garlic, whole
  • 1/4 cup balsamic vinegar
  • 2 tablespoons worcestershire sauce
  • 1 tablespoon herbs de provence
  • Olive oil
  • 1 pound dried Farfalle (bowtie) pasta
  • 2 cups heavy cream
  • 2 tablespoons butter
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon granulated garlic
  • Pinch of nutmeg
  • 1/2 cup parmigiano reggiano, grated
  • Zest from one lemon
  • 2 tablespoons flat leaf parsley, finely chopped
  • Kosher salt and black pepper, to taste
  • 1 cup seasoned panic bread crumbs, toasted

Instructions

  1. In a large skillet, drizzle in about 2 tablespoons of olive oil and the panko bread crumbs, and toast over medium heat. Keep moving the crumbs around constantly so they don’t burn. When they’re all golden brown, transfer them to a bowl to cool. You will most likely have extra crumbs after this is all eaten, so keep the extras in a small airtight container for another use. They keep for up to 2 weeks.
  2. Preheat oven to 425° F. 
  3. Layer the sliced mushrooms and whole garlic cloves in a large baking sheet. Drizzle with a generous amount of olive oil, about 1/4 cup to start. Pour the balsamic vinegar and worcestershire sauce all over the mushrooms. Sprinkle the mushrooms with herbs de provence, a good amount of kosher salt, and black pepper. Toss everything gently to coat. Add a little more olive oil if needed. They shouldn’t be swimming in oil, but none of them should be dry. Use your best judgement. Arrange the mushrooms in a flat layer (it’s ok if some overlap), and roast for 20 to 22 minutes. The mushrooms will shrink significantly, and the garlic will be toasted and blistered. Set aside to cool.
  4. Meanwhile, boil your pasta in salted water and cook 4 minutes less than package directions. Example: if they tell you to boil for 14 minutes, you’ll boil for 10 minutes. While pasta is boiling, chop and/or smash the roasted garlic until it’s a paste. 
  5. Melt the butter in a large skillet over medium heat, preferably one large enough to hold the pasta. Add the smashed garlic, and crushed red pepper flakes. Cook for about 30 seconds, then add the heavy cream.
  6. Transfer the undercooked pasta to the heavy cream and roasted garlic, keeping some of the pasta water on hand if needed. Bring the mixture to a boil over high heat, then immediately reduce the heat to medium-low and continue cooking until the pasta is fully cooked through. Note: Adjust the consistency with the pasta water if needed. If your pasta water is too salt, use regular water, adding in 2 tablespoon increments if needed.
  7. When the sauce starts to thicken and cling to the pasta, reduce the heat to low, give it a taste, and season with salt, pepper, nutmeg, and granulated garlic.
  8. Turn off the heat. The sauce will continue to thicken as it stands. Add the cheese, parsley, and lemon zest. Fold in the roasted mushrooms to warm them through, until combined. 
  9. Serve with desired amount of toasted bread crumbs, and enjoy immediately.

Notes

Use any blend or variety of mushrooms that you desire, they all cook the same.

    Made this last night and it was a success! I didn’t have heavy cream so I just subbed it with a lot of butter and whole milk. It was still excellent regardless, but I will make sure to have heavy cream on deck next time..

    I made this dish last week and it was a hit with my picky eating 8-year old! The nutmeg, lemon zest and bread crumbs set it off in a major way! Since it’s just the two of us, next time I’ll half the recipe. I cannot WAIT to make this again.

    Made this when it was a highlight on your Instagram and it is AMAZING. I wasn’t going to add the breadcrumbs but they made the dish POP. i love mushrooms and the Worcestershire and balsamic really highlighted their flavor against the creamy cheese and lemon flavors. This will definitely go into rotation. My son doesn’t like mushrooms (he’s 9, whaddaya say lol), but he REALLY loved it too. ( I just kept the mushrooms separate and added them to my bowl only.) He went back for 2nds…and with a picky kid, that was HIGH compliments!
